Christopher's Table Asparagus Did you know that asparagus is in season now in NJ? You should only be purchasing local NJ grown until it is gone at the end of June. It is so important to support our local farmers and communities as well as it cuts back on fuel consumption and has more vitamins and nutrients.
Asparagus is a powerhouse of a vegetable. It is one of the most nutritionally balanced vegetables: low in calories and sodium, no fat or cholesterol, a good source of potassium, fiber and vitamins A, C, E, B6, folate and thiamin. It also contains glutathione, another potent antioxidant with anticarcinogenic activity.
We are only using locally grown Nj asparagus now and feature it in many of our meals. Dinner With The Family Eating at home with the family seems like a thing of the past these days. We are so consumed with so many other things that we have lost the importance of “family time.” I believe that families should eat dinner together on a regular basis. When I recall my childhood memories, eating with my family always seems to come first. It is so important that we strive to keep the concept of family strong, especially for our children.

Recipe: Grilled Shrimp Tacos A Perfect Dish For The Warm Weather
Salsa 3 medium tomatoes, small dice ¼ red onion, small dice 3 tbs, minced cilantro 3 tbs lime juice Minced jalapeno to taste Salt and pepper to taste
Cilantro Cream ¾ cup mayo ¾ cup plain yogurt 2 tbs minced garlic 3 tbs minced cilantro 2 tbs lime juice Salt and pepper to taste
Shrimp 1 1/2# large shrimp 3 tbs olive oil 2 tbs lime juice 1 tbs minced garlic 2 tbs minced cilantro 1/2 tsp smoked paprika Salt and pepper to taste
1)Toss all shrimp imgredients together and let sit 15 minutes. 2) Mix all salsa ingredients. Mix all cream ingredients. 3)Grill shrimp about 4-5 minutes on a hot grill turning once after 3 minutes. 4)Heat tortillas on grill 20-30 seconds and set aside. 5)Assemble tacos with shrimp first, sauce, cabbage, radish salsa and lime squeeze.
